Penne alla vodka
1/2 onion, diced
3-4 cloves garlic, crushed
8oz pancetta (or whatever size they have) or 8 slices of bacon
1/2 cup vodka
2 cups heavy cream
32oz crushed tomatoes
2 tbsp tomato paste (optional)
2 tbsp butter
Basil & parsley for garnish
Saute onions until translucent & a little bit of color starts to form on the pan. (5-10 mins) Add in garlic & cook for another few minutes or until fragrent. (make sure it doesnt burn) Add in tomato paste & cook for another few minutes or it gets darker in color. (optional) Add vodka in to deglaze & scrape the pan, Once the liquid has evaporated and the alcohol smell is gone, add in the can of crushed tomatoes. Continue cooking down until very thick & most of the liquid from the tomatoes have evaporated. Add in heavy cream & butter & mix to combine. Finish with basil or parsley or both. Salt & pepper to taste. Add in a little bit of the starchy pasta water when finishing the sauce.
2lb boneless, skinless chicken thighs or chicken breast
Seasonings: salt, pepper, garlic powder, onion powder, paprika
Saute for 3-5 mins per side (depending on thickness)
Chili garlic green beans (can substitute for any veg)
2lb green beans
5 cloves garlic
red chili flakes
1/2 lemon
Wash green beans & dry thoroughly. Saute green beans on high heat until almost fully cooked. Lower heat & add in garlic. Add salt, pepper & red chili flakes to taste. Finish with lemon juice off the heat.
